I totally get that, sometimes cooking is a drag! Chicken noodle soup with chickpeas instead of chicken is definitely a tasty one to try too!

Have you tried it with chickpeas instead of meatballs? I'm vegetarian too and I love subbing in chickpeas where it calls for meat in soups :)
