But even looking at the brood/straw sign ups they are not super busy. Only a hand full of stables on each thread if that

Very much Aussie!
barely in the saddle as of now when she's starting to buck, no pressure on anything but the saddle, we work in paddock and arena but she's doing it in both aswell

I know of a young mare who gets wild when she's regularly fed alfalfa/lucerne, she will buck, race off and be generally unpleasant to ride. There are other anecdotal stories of horseowners who cannot feed their horses lucerne because of behavioral changes. But please discuss this with your vet, they can give better advice because they can see your horse.
Edit: I am located in western Europe, as are the stories. I don't know if there a difference is between our lucerne and your lucerne.

Does she do it if youre not working her at all? like if your out on a trail ride and she can just turn her brain off?

Havent read all the comments but could be tied to her cycles/painful ovaries. Maybe want to look at having a breeding exam done on her to rule out issues there...

Trail Rides ect not an issue, legitimately havent tried it since the last session, been going back to ground work and seeing what I can do about it... but gonna have a breeding exam done
