We don't have Appaloosas (the breed) in the game, it refers to the coat pattern. Yours are both leopard spots, so the all-over spotted pattern.

Typically players are gonna go for better rated stallions. My EEE stallions on another account get used a lot, but they all have fancy colors and or patterns to offer. I usually put them up for free breedings. Mine are set to the minimum rating at AAA to avoid players spam breeding unrated mares and then immediately FR'ing the resulting unrated foals.
