We don't have Appaloosas (the breed) in the game, it refers to the coat pattern. Yours are both leopard spots, so the all-over spotted pattern.

I recently held my first auction and I had 3 horses with bids, but only one sold. How is this possible? Can you bid without having the ebs in your account?

Having a look at your auction and the bids placed, the two that did not sell were bid on by a stable that did not have the space for them.

To quote the game guide:
To win horses in auction you must have empty stall space or pasture space. If you don't have space, the horse will go to the next highest bidder.

Since they did not have the space and there were no bidders before them, the horses were not auctioned.
