The best way to improve your quality of breeding is to invest in some decent producing PEE+ mares. You don't need a stallion but if you do decide to purchase one for in-barn breeding you'll want an EEE who has a record of producing EEEs (or PEE+)
Track your training. If you breed All Disciplines, make sure all your breeding stock is trained in All Disciplines, and mark when they go "up" bars in the six stats. Optionally, I would say it's a good idea to cull any horses who don't go up at least 3 bars on week four, but that's up to you.
Training AD will give you a good idea of a horse's strengths and weaknesses and allows you to more accurately match them. For example, if I have a horse who went up in hrt, spd, and str on week four, I'm going to want to look for a stud who went up in at least int, scp, and hrt week four. As they train more, you'll get a bigger picture of what exactly are their best strengths and worst weaknesses, allowing you to fine-tune your matching.
If you can afford it, you should either look for good (whatever breed)LB or ABLB studs to match your best mares.
Alternately, you can earn ebs by brooding out your mares instead of breeding them yourself. Showing is another great way to earn ebs as well, and there are a handful of good show guides (and breeding guides!) to help you.
If you want help finding studs to match your mares, I'm always happy to help.

My biggest tip is to wait until you've established a reliable and extensive show string before delving into breeding. If you have the finance to fund breeding, you'll have more success.

I checked out your barns. You have a lot of EEE stallions and not many good mares. EEE stallions are not a good investment unless you buy low (like 2-5k) and then try to sell for a bit more. From a breeding standpoint they are basically useless. There are a lot of WEE+ combos that you can breed to cheaply so why would people breed to a lesser stallion. Also, owning better mares means you can breed to leaderboard stallions in an attempt to increase your ratings. That said, it is important to train all your horses in AD and track them. People like to match their breedings so the more information on the parents the better.
