Is a horse born with a certain bravery? Can you train him then check his bravery and hope to get a better rate? Does the training really do anything for the horse? How does the training effect the horse in the game or does it?

Horses are born with a certain rating. It is no different than any other rating. Training will not give the horse a higher rating.

When you round pen train a horse they have a tendency to spook less and have greater success standing still for photos, that's the only perk.
