I'm starting a SD PON SJ line.

I've got some boys with E, not producing overly well so far but oh well.

More to my question. Is it worth keeping xxP mares or only xxE mares?

Also, is it better to train the stallions/mares in their E discipline (so SJ) or keep them on all D?

Any help is welcomed, never bred SD before.

It's best to keep only xxE mares. As for your second question, some people prefer to train in AD others prefer to train in SD, it all depends on your preference. I personally train in SD.
