We don't have Appaloosas (the breed) in the game, it refers to the coat pattern. Yours are both leopard spots, so the all-over spotted pattern.

The only thing you have to watch out for is making weaknesses worse. For instance, if you have two full siblings and both inherited weak Movement, breeding them together would probably make their Mvt stats a lot worse. If their strengths and weaknesses balance out, however, then go for it.
