This might be on purpose, but I find it really inconvinient: I did not know the pasture name cannot be changed after it has been converted into a graveyard. I'd love if that was possible.

It can be renamed. You need to go to the barn/pasture page when you go to barns, scroll to bottom, click on pastures. It'll take you to another page with a drop down where you can change the name.
