There are equine classes, I'm not taking any because I don't really have time with my required schedule so I'm not sure if they go into color genetics :) We do a lot of lab work which is transferrable to horses but don't work with them directly

yeah, peacock is just a phenotype thing, it can be rerolled on and off(sadly). It's not inherited though. Brindle is similar, being random factor, but I think it's less common, as I've bred 1 brindle but 2 peacock appies. Brindle can't be rerolled off.
The only thing I know they can't be is gray^^
