Hi, I got this quest to breed a Premium rated foal. My questing is: does Bravery count as well? Or do only the main traits (dressage, show jumping and cross country) count for that quest?

I believe only the main rating counts, mostly as I haven't seen a bravery quest quite yet.. I could be wrong, But this is from my experience.

Bravery does not count as a "rating" - as it is only an explore-related thing ;)
